Boil the water in a big pot. Add the dried rice noodles. When it boils again, stir well the rice noodles to make sure they do not stick to each other or the pot. Boil for about 20 minutes, or taste it to ensure the texture is right, a bit chewy is fine.
Rinse them with the cold water, and let them drain.
In a hot pan, add oil/or the fat oil. Add chopped garlic and ginger before stir- frying the marinated sliced meat.
Take the meat out to a bowl. (optional. You can leave the meat in the pan)
Add thinly sliced carrot, mushroom, frozen corns into the pan. Mix them, and leave the lid on and cook for about 15 minutes.
Add drained rice noodles in. Add soy sauce. Toss the rice noodles with the vegetables well until they are flavorful。
Sprinkle the green onion before the final toss.
Steam Pork Rib with an Egg
Cut two pork ribs into cubed slices.
Bath them in water for half an hour. Wash away the meat blood.
Soak again in water, where a teaspoon of baking soda and some Sichuan pepper are added in, for another half an hour. Rinse with water for a couple of time, making sure the Sichuan pepper is taken away.
Marinate the meat with ginger, wine, soy sauce, a little bit sugar and pepper. Tenderize the meat by rubbing and kneading with cornstarch.
Put the meat in a plate, and crack an egg to the side.
Boil a big pot of water, and steam the meat and egg for about 7-10 minutes.
