京东肉饼和慈禧的传说

去年秋季我转道前去了北美,见到了久别重逢的发小一家。TA们得知我有三十多年没有吃过传统的家常便饭了,就专门在家中为我做了炸酱面。看着那浓浓的甜面酱,闻着那个曾经的香味,30余年渐渐忘却的记忆!我想起了北京的夏天,炸酱面,芝麻酱面,红糖麻酱饼;还有我最喜爱的红豆粥,绿豆粥,大麦百合粥…,各种糯米粽子,小枣的,豆沙的,鲜肉的。
记得我在发小的多市家里,当仁不让地“客客气气”就很快地吞下了一大碗,然后才又专门补吃蔬菜。遗憾好吃佬只顾吃,却忘记了拍张照片的大事情。
为了感谢发小那个久违的美味,晚餐我为她一家做了好久好久不做的北京肉饼,一边做还一边给她一家讲了一个听外婆讲的民间传说。说是当年慈禧郊外踏青,肚子饿了,这可是忙坏也吓坏了一众跟班宫女和太监们,啥都没来得及带呀。此时,从一处农家茅屋飘出了浓郁的肉香,于是打发下人去要,慈禧品过大喜,于是带入京城宫中。就这样该农家食就在北京城普及开来,被称为京东肉饼。
为了配上我的肉饼,朋友做了难得的玉米粥加枸杞子还有开胃口的泡菜。大家吃的好,连称,好吃,哈哈哈。但是,由于加拿大的全麦面粉与日本的精白面粉很不一样,颌面时掌握软硬程度不太好把握,没有把肉饼的层次感和柔软度表现出来,虽然那小麦粉馨香扑鼻。后来,我在加西的房东家,为聚会的她家友人们使用了习惯的精白面粉,那地道的感觉就再现眼前了。
