当然,人的饮食习惯是慢慢形成的,不能也不应该因为硝酸盐和亚硝酸盐有些好处,就特意把当天烧好的蔬菜放到第二天才吃,或者原来不喜欢吃腌菜,但现在开始天天逼着自己吃腌菜。看了这些最新的研究发现之后,我是这样思考和打算的。等我有钱的时候,我就雇一个大厨给我做饭,每顿都吃新鲜的。隔夜菜即使有好处,我也扔了不吃。不过,我会吃更多的腌菜。我会要求大厨给我腌雪菜、腌白菜、腌青菜、腌莴笋、腌黄瓜、腌荠菜,所有能腌的蔬菜都要给我腌。这样我就会吃得很健康,吃得很开心,再喝点小酒,小日子就会过得很美好。

谢谢你留言!老婆是世界上最难说通的人:)如果她不想吃隔夜菜,就随她好了。但是有一点要明白,人在嚼新鲜蔬菜的时候,蔬菜里的硝酸盐就在口水里的酶的作用下,还原成亚硝酸盐了。请参见这篇文章:
