酱肉做法来自《培梅菜谱》,我用后腿肉代替蹄膀,还加了半匙盐。<br />

连皮前腿小蹄膀1个<br />
甜面酱二大匙<br />
酱油三大匙<br />
绍兴酒一大匙<br />
冰糖一大匙<br />

做法:<br />
1连皮前腿蹄膀一个,先洗净擦干水分后用甜面酱涂抹在肉之四周,并用力揉搓,放置并腌约2,3小时<br />
2在深底小锅内,放入酱油,酒,八角,桂皮,等煮滚,再将猪肉落锅同煮一下,随后加入滚水三杯,改用小火慢慢焖烧,约半小时后加入冰糖在继续小火煨煮一小时左右,(需时时加以翻面)<br />
3煨煮至锅中汤汁仅剩下半杯,而此汁已经非常粘稠时,离火,待肉冷透后取出用利刀切成大薄片排盘,(原汁浇在上面供食)。<br />
注:酱肉除可做冷盘之外,最宜夹在烧饼内食用,也可用薄饼或油饼包卷而食。<br />

虽说是发糕,但得先说酒酿。<br />
上周心血来潮,买来药丸自己做酒酿,居然成功了!配方上说一个药丸可做四杯米,我没敢偷工减料。这下好,做了酒酿元子酒酿泼蛋,还有的多,于是想到用酒酿代替酵母发面。<br />
大概2杯玉米粉,半杯糯米粉,2大勺酒酿,温水适量,搅成面糊,室温,过夜。第二天早晨面糊表面有些气泡,我认为发酵成功了。可是面糊体积没有增大,我担心发不起来,就又加了大概一小勺baking powder。红枣事先用清水泡软了,切成小丁,也加进去。搅匀后倒入烤盘,水开后蒸了20分钟。关火。五分钟后揭开盖子,好失望,没发起来!<br />
可能是糯米粉放多了,有些粘。口感不同于单独用玉米粉做的 发糕。我没有放糖,反到凸显了枣甜酒香。<br />
这是个失败的尝试,如果您用酒酿发面成功过,请介绍一下经验吧,我家还有酒酿呢!<br />

豆腐肉饼<br />
老豆腐挤压出水后拌在调好味的肉馅里,加些干淀粉增加粘性,做成饼状,油煎两面,加黄酒酱油糖和水,大概烧10分钟,把肉饼摆在盘里,把剩下的汤汁浇在肉饼上。<br />
加豆腐在肉馅里有两点好处,一是肉饼更嫩;二是让女儿吃些豆制品。豆腐单烧她不吃的。<br />
做成饼的形状是因为很少的油就可以煎了,还易熟;做成狮子头的话,要用很多油来炸,我最不喜欢在家起大油锅了。<br />
