之前网络上有流传一则消息:“给剩菜平反了?某教授表示剩饭剩菜里就有最好的血管扩张剂。文中称,亚硝酸盐本就是一种很强的血管扩张剂,能通畅血管清理体内垃圾的作用,还能预防骨质疏松、老年痴呆等。
对此很多人就有疑问了,亚硝酸盐是有毒物质怎么还对身体健康有好处?若是对身体有益,是不是我们应该常吃剩饭剩菜呢?
专家回应:属断章取义

专家回应该消息明显的断章取义,误导消费者。如果能够在蔬菜烹调之后及时放入冰箱冷藏,过夜之后仍然是安全的,测定也表明这样的蔬菜亚硝酸盐含量不会引起健康风险。微量的亚硝酸盐甚至可能通过转化成一氧化氮,起到扩张血管的作用,对降低血压和预防心脏病有好处,但并不是说亚硝酸盐是好东西,鼓励大家多吃亚硝酸盐。
另外专家提出,平时可多食用维生素C的食物,可抗氧化。
维生素C是一种强有力的抗氧化剂,它能有效清除各种自由基和活性氧,可防止血管中脂质过氧化,减少动脉粥样硬化等心脑血管病。如富硒野兰荞,可以降“三高”,其中富含“硒”成分和“芦丁”,具有改善心脑微循环,让患有心脑疾病的人得到舒服。
